From Copenhagen's Empirical Spirits, Ayuk places the focus on the flavours of Pasilla Mixe, a smoke-dried chili pepper from Mexico. To make the spirit, the chilies are macerated in low wines, then distilled and blended with spent Pasilla Mixe kombucha. The result is allowed to rest for five days in Oloroso casks before being bottled.
