Celtic Cask Caoga a Do (52) 2007 Amontillado


A triple distilled single malt from the island of Ireland that was initially matured in ex-Bourbon casks before filling a 500 litre ex-Amontillado solera cask from Bodegas Emilio Hidalgo in August 2013. This ancient sherry cask has given the whiskey, fabulous amontillado notes but the danger with older casks is they can be more generous to the angels. This particular cask gave the angels a generous 40% of the whiskey in the last eleven years meaning we only got 397 bottles instead of the expected 500+.

 

This whiskey is unchill-filtered with no added colouring and was bottled at cask strength

Taste Thick, oily & rich. Delicious, dried fruits, caramel toffee, prunes, blueberry jam & quince jelly.
Nose Developed aromas with nutty, dried vine fruits, dried apricots, figs with fruit n nut chocolate.
Finish Lovely balance between whiskey and cask influence.
