Co-founder of Edinburgh Gin, Alex Nicol, was determined that their next special release should showcase some great Scottish ingredients. With the prime-gin-imbibing season of summer on its way, and Edinburgh’s local shoreline bursting with unusual botanicals just waiting to be foraged, the idea for Seaside Gin was born…
Handcrafted by head distiller David Wilkinson in collaboration with four specially selected postgraduate students from Heriot-Watt’s MSc in Brewing and Distilling, this tipple has the unique flavour of summer at the beach.
David and the team explored the Scottish coastline in search of the perfect indigenous ingredients for a distinctively Scottish seaside flavour. After extensive experimentation, they settled on a combination of seaweed, scurvy grass and ground ivy to lend the gin a slightly sweet yet refreshingly mineral taste – perfect for mixing into G&Ts on long, hot afternoons or creating summer Seaside Martinis.
